While tea does have varietals, similar to wine, all tea comes from the same species of plant Camellia sinensis. The difference between the major tea types (black, oolong, green and white) is in the way the teas are processed after harvesting.

Black teas are fully oxidized, meaning that they are exposed to air for two to four weeks before they are heated and dried to stop oxidation. Oolongs are partially oxidized. Oxidation gives a tea more body and brings out stronger flavors, consequentially, while many of our teas are good with honey, black teas are by far your best choice if you prefer milk and sugar. Black tea should be steeped with boiling water for 3-5 minutes. Oolongs should be steeped a bit less than boiling, also for 3-5 minutes.

Tea Forte’s black currant tea is a full-bodied black tea infused with black currant, and blended with blackberry leaves. The fruity blackberry aroma is irresistible. Delicious with milk and a touch of sugar. Contains caffeine.

Herbal teas are technically called tisanes not teas, as they are not made from the tea plant Camellia sinensis. Still, in accordance with typical modern use, we use tea and tisane somewhat interchangeably with our herbals. Our herbals are made from all natural rough cut flowers and herbs, including many (such as chamomile, hibiscus and ginger) that have been used for taste and health for centuries.

Rooibos (as found in our African Solstice) is a South African plant that is often referred to as “red tea,” though it is also a caffeine-free tisane. Leaves from rooibos, or Aspalathus linearis, are oxidized much like tea. The high antioxidant levels in rooibos approach those of tea, and rooibos tisanes are rapidly gaining popularity in Europe and North America. All of our herbals should steep with boiling water for 3-5 minutes or longer to taste.

Green tea undergoes very minimal oxidation, meaning that it is exposed to air for one to two days after harvest. White tea is immediately heat shocked to prevent oxidation, and then dried. The difference is really more of a spectrum than a clear distinction, both kinds of tea taste fresher and lighter than blacks or oolongs. They often have grassy overtones and a clean finish. Greens and whites should be steeped at less than boiling water for 2-4 minutes. We recommend 190°F, but, as with any tea, you can experiment to your own taste.
