在永康公園旁靜巷內經營茶文化工作室的何健,懂茶、愛茶,也把對茶的熱情傳染給所有跟他問茶、學茶的人。他能把茶說成一齣歌劇、一首古典樂曲或一本文學巨著,在豐富的節奏和層次感中,帶領大家感受品茶的樂趣。

何健,喝茶30年,「冶堂」茶工作室主人何健喜愛分享茶的美好滋味,以及茶與人的「心靈邂逅」。除了茶,何健也收藏茶具,對茶與茶具、茶與美食的搭配,有執著的品味。

何健回憶茶給他的第一印象:小時候,母親總是一早泡好一壺茶,不管任何時間,只要他口渴,便大口喝下。當時他並不懂欣賞茶的香氣與滋味,只是日復一日,口渴了,喝茶。

茶癡 六只壺敗掉一個家

後來在銀行工作,收到茶農客戶親手種的茶,這是他第一次體會到茶的美好。因此何健曾為了六只茶壺,賣了房子,他笑說這是「重要、愉快的敗家經驗。」也開啟他在浩瀚茶學裡的無限追尋。

從一開始解渴,到感官上的欣賞,最後獲得心靈的沉澱,何健說:「喝茶讓你安靜、思考、沉澱。」忙碌的現代人長時間活在虛擬世界,卻忘了關照自己。若替自己泡一杯茶,工作之餘便會站起身沖茶,暫時離開電腦,這就是「茶的安排」,讓自己沉澱。

「透過茶的滋味,能夠與大自然對話,清楚感受到真實的氛圍。」每一季的茶因氣候而有不同香味,喝了茶,感受喉間的變化,進而體會天氣的差異,也與大自然有了連結。

喝茶 體會人與自然關係

而當一個人拿起杯子喝茶,便知道「珍惜」,因為杯子要小心拿、以免打破。從中學習到「人與人、人與物、人與自我的關係。」

關於品茶的層次與境界,何健表示,若有四個人喝同一壺茶,甲喝完覺得解渴了;乙在解渴之外,還嗅到茶香;丙說茶好香、好甘甜;丁認為喝完後好像身處湖光山色的大自然,感受到香氣滋味的多重變化。「同樣一杯茶,沒有對與錯。」只因茶會滿足不同的需求及品味。

茶有「真味」,何健說,「回歸到純淨、自然」,讓大家欣賞茶最原始的味道,就是「真味」。茶讓我們有甘甜、苦澀的體會,不過每個人的體會不同。何健不願說好茶該有的樣貌與滋味,「因為你自己最喜歡的茶,就是最好的茶。」

好茶 苦後回甜澀後生津

若要形容茶的滋味有多奧妙,何健說「苦後回甘、澀後生津」這八個字說盡一切。好的苦是「回韻甘甜」;好的澀是有種「收斂性」,慢慢化開後能「生津」。

何健認同「以茶佐食」的觀念。以中餐為例,在主客落座後、菜肴上桌前的冷盤,可以奉上讓感官「清靜、沉靜、乾淨」的輕發酵茶,例如三峽綠茶、文山包種、高山烏龍。

待重口味的紅燒、油炸肉類上桌,建議搭配有點力道的烘焙茶,像凍頂烏龍、鐵觀音,降低食物油膩感。最後選擇重發酵的東方美人、魚池紅茶等香氣持久的茶,讓杯底的餘香伴隨著口齒的回韻做結。

茶名十二問與答 一、普洱茶產於雲南西雙版納等地,它的培育距今已有1700多年的歷史。你知道“普洱”的意思嗎?    答:普洱茶亦稱滇青茶,因其原來的運銷集散地在雲南普洱縣,故名。“普洱”是哈尼語。“普”為寨,“洱”為水灣,“普洱”意即“水灣寨”。 二、碧螺春是一種馳名中外的綠茶,以蘇州太湖之濱的東、西洞庭山出產的為最佳。你知道它的名稱含義嗎?     答:碧螺春的茶名中每一個字,都從不同角度指出了該茶的特點:“碧”指茶的湯色碧綠;“螺”指茶的條索緊結、形似螺旋;“春”指該茶采摘於春季。 三、大紅袍歷代都是貢茶,因茶樹而得名。早春茶芽萌發時,從遠處望去,整棵茶樹艷紅似火,仿佛披著紅色的袍子,故名“大紅袍”。關於它的得名,還有一個傳說,你知道嗎?     答:相傳福建武夷山上的天心廟和尚,用一種神茶治好了一個上京趕考的舉人的病。舉人考中狀元後,為感謝神茶的救命之恩,重回武夷山,脫下身上的紅袍披在茶樹上。大紅袍茶由此而得名。 四、杭州的龍井茶久享盛名,冠列中國綠茶之首。你知道“龍井”是什麼意思嗎?    答:龍井茶因產於浙江杭州的龍井村,故名。“龍井”原名叫“龍泓”,是深山亂石中的一股泉水名,位於西湖西邊的鳳篁嶺上。清水一道謂之“泓”;水流蜿蜒而行,形似一條遊動的蛇,人們諱言“蛇”字,而以“龍”字代之:故曰“龍泓”。後來有人在泉水附近開了一口井,以泉為名,名曰“龍井”。漸漸地,龍井周邊形成了一個村落,以井為名,稱為“龍井村”。 五、黃山毛峰屬綠茶類,為歷史名茶,創制於清光緒年間。黃山毛峰的得名,你知道嗎?     答:“黃山毛峰”以形得名:“毛”指毫毛,該茶“白毫披身”;“峰”是形容茶芽的形狀,該茶“芽尖似峰”。 六、烏龍茶,今亦稱青茶。“烏龍”之名出於北宋時期,當時北苑(位於福建省建甌市東,宋屬建安縣)所產的茶被列為貢茶,因其制法是將茶索加工成龍團鳳餅形狀,像盤曲著的蟒蛇,因而得名“烏龍茶”。民間關於“烏龍茶”的來歷,還有不少神奇的傳說,你能說出其中的一則嗎?     答:烏龍茶的得名,有多種說法。一種傳說認為,烏龍茶因本茶的創始人而得名。據記載:清朝雍正年間,在福建省安溪縣有一個茶農,也是打獵能手,姓蘇名龍。因他長得黝黑健壯,鄉親們都叫他“烏龍”。有一年春天的某一日,烏龍腰掛茶簍,上山采茶。當天因為意外地捕獲了一頭山獐,全家人都很興奮,將制茶的事全然忘記了。翌日清晨,烏龍纔忙著準備炒制前一天采回的茶青。沒想到,放置了一夜的鮮葉,已鑲上了紅邊,並散發出陣陣清95。當茶葉制好後,清95四溢,全無往日的苦澀之味。後經細心琢磨與反復試驗,烏龍終於創制出了品質優異的新茶,名曰“烏龍茶”。 七、鐵觀音沖泡後,湯色黃亮,艷似琥珀,回甘悠久,“七泡有餘95”。鐵觀音的得名,有一個傳說,你知道嗎?     答:相傳,清乾隆年間,福建安溪縣的茶農魏飲,制得一手好茶。一夜,魏飲夢見觀音告訴他在山崖上有一株散發蘭花95味的茶樹。正想采摘時,一陣狗吠把他的好夢驚醒。第二天,他果然在崖石上發現了一株與夢中一模一樣的茶樹,於是采下一些芽葉,帶回家中精心制作。制成之後,茶味甘醇鮮爽,魏飲精神為之一振,認為這是茶中之王,就把崖石上的那株茶樹挖回家進行培植。幾年之後,茶樹長得枝葉茂盛。此茶葉較其他茶葉為重,色澤似鐵,又是觀音托夢所獲,魏飲於是就稱它為“鐵觀音”。 八、凡是涉足臺灣茶者,言必稱凍頂烏龍。近年來,內地的一些茶藝館也紛紛推出凍頂烏龍茶。你知道“凍頂”是什麼意思嗎?    答:“凍頂”是山名。凍頂茶,產於臺灣省南投的凍頂山,此山繫鳳凰山的支脈,山高林密,土質好,茶樹生長十分茂盛。傳說山上種茶,因雨多,山高路滑,上山的茶農必須繃緊腳尖(凍腳尖),纔能登上山頂,故稱此山為“凍頂山”。 九、“浙杭龍井,徽六瓜片”。安徽的六安瓜片在中國名茶史上一直占據著重要地位。你知道它得名的原因嗎?     答:六安瓜片,簡稱片茶,全由葉片制成,不帶嫩芽和嫩莖。該茶以形似葵花子、呈片狀而得名。 十、福建的白毫銀針是我國十大名茶之一,素有茶中“美女”“茶王”之美稱。你能說出它的名稱含義嗎?    答:白毫銀針以顏色和形狀得名:茶葉滿身披著白毫,色白如銀,細長如針。 十一、白牡丹茶是我國白茶名苑中的珍貴品種。請問它是用曬干的牡丹花做原料的嗎?     答:不是。此茶綠葉夾著銀白色的毫心,形狀好似花朵,衝泡後綠葉托著嫩芽,宛若牡丹的蓓蕾初放,因此得名“白牡丹”。 十二、 雲南沱茶的產制歷史悠久,早在明代謝肇《滇略》一書中就有記載。它的得名,有多種說法,你能說出其中的一種嗎?     答:沱茶的外形呈碗臼狀,是雲南茶葉中相當古老的品種。其名稱的由來,有多種說法。其中一種說法是從茶的制作方法著眼的:“沱茶”的“沱”字,是“團”字的諧音––因為沱茶的制作方法是“蒸而團之,緊壓成型”,即將散茶蒸後,加工揉制,壓縮成塊,便於攜帶和馬幫運輸。 茶名十二問與答 - 品茶茶藝 - LeeDeeLive - Powered by Discuz!

The beauty of Taiwan tea resides in the consolidated wisdom of the present generation to jointly demonstrate the unprecedented elegance of Taiwan tea. I. The History of Taiwan Tea story photo Lu Yü Brewing Tea by Chao Yüan (A.D. 1372) (The Collection of the National Palace Museum, Taiwan) The tea consumed by the Taiwanese was first imported from China—primarily from the provinces of southern Jiangsu and Fujian—during the Ming and Cing dynasties. At that time, the majority of Taiwan’s tea drinkers were people with wealth, power, or scholarly backgrounds. During the Japanese occupation, Uji tea began to be imported from Japan, adding influential and wealthy Japanese to the list of tea consumers in Taiwan. After Taiwan’s retrocession to the Republic of China, mainland teas were available on the market, making it a drink for the masses. However, during the early stages, local Taiwan teas were produced mainly for export purposes, and it was not until the 1970s that the tea market slowly began to be turned inward to meet local demand. story photo Three artistic teapots by Jhang Ji-tao.(Photo by Huang Chung-hsin) Local Taiwan teas originated from plants growing in the wild. There were two main types whose primary difference lay in the color of their sprouts: Taiwan mountain tea, which had greenish or light-purple sprouts, and purplish-red sprout mountain tea, which had fuchsia sprouts. Taiwan teas held little commercial value at first, but this changed after improvements were made to Taiwan Tea No. 18, which was suitable for making black tea. In 1860, after China and Britain exchanged ratifications of the Treaty of Tientsin in Beijing, the port of Danshuei was opened for trade, British tea merchant John Dodd began working with local tea merchants and farmers to promote Taiwan tea, slowly developing it as an export item. Before long, tea ranked first among Taiwan’s top three exports, ahead of both sugar and camphor. The earliest teas exported during the Cing dynasty were oolong and baojhong tea, which began to be sold abroad in 1865 and 1881, respectively. story photo High quality tealeaves come from high-altitude terraced fields. (Photo by Yeh Ming-yuan) In 1906, during the Japanese occupation, Nitton black tea began to be exported alongside oolong and baojhong tea. At the same time, the Taiwan Governor’s Office began to assist private organizations, such as the Taiwan Tea Businessmen’s Association, to introduce the beauty of Taiwan tea to the rest of the world through the establishment of teashops at international fairs. With the beautifully designed posters advertising Taiwan tea at those fairs, the elegant packaging of Taiwan tea products, and the refined and professional serving techniques of the salespeople, the global image of Taiwan tea was quickly elevated. After Taiwan’s retrocession to the ROC, Tang Ji-shan introduced green teas to Taiwan’s existing exports of oolong, baojhong, and black teas. This included the introduction of fried green teas, such as jhu tea and mei tea, in 1949. In 1963, steamed green tea, or Sen tea, began to be exported to Japan, and by the time Taiwan tea exports had reached its peak in 1973, the largest export product was Sen tea. During this period, the government established the interministerial Taiwan Tea Improvement Organization to assist private tea enterprises. At the same time, the private sector was using the Taiwan Tea Manufacturers’ Association and the Taiwan Tea Exporters Association as its backbone for promoting Taiwan tea. story photo The art of tea includes the way tea is served and the etiquette involved. In 1973, the Taiwan Tea Promotion Team headed by Lin Fu-cyuan began to advertise teas for domestic consumption, and the following year, the Taiwan Provincial Government’s Department of Agriculture and Forestry sponsored a provincial tea exhibition in Sindian. Through the collaboration of county governments in tea-producing areas, farmers’ associations, and the mass media, a stable foundation was created for promoting tea on the domestic market. On August 14, 1977, the Chinese Kung Fu Teahouse, the forerunner of Taiwan’s modern teahouses, was established. Before long, teahouses were sprouting up everywhere like bamboo shoots after a spring rain shower, and throughout the 1980s, these local teahouses slowly organized into associations devoted to the promotion of tea culture. story photo Long-handled teapots are designed to protect connoisseurs from boiling water. (Courtesy of Sinorama) Under the joined efforts of the government, tea farmers’ associations, tea manufacturers’ associations, teahouse associations, teahouses, and tea scholars, domestic tea consumption was gradually transformed into a contemporary and flourishing artistic tea culture. On ordinary days, these organizations and individuals worked hard at their own respective jobs. However, when it came time to host a cultural activity on tea, they would divide the labor, cooperate with each other, and work together to portray an image of the art of Taiwan tea that fully demonstrated its elegance. II. The Beauty of Taiwan Tea All aspects of the art of Taiwan tea—whether it’s the teaflavor, tea water, tea sets, tea-serving techniques, tea connoisseurs, teahouses, tea refreshments, or tea feasts—have been developed to a consummate level in Taiwan. (Photo by Eugene Yen) The beauty of Taiwan tea resides in the teaflavor, with aesthetic standards set by the clearness of its coloring, the purity of its taste, and the elegance of its aroma. Whether it’s baojhong tea, dongding tea, pengfong tea, tieguanyin tea, dragon well tea, or black tea, each type has its own unique characteristics. Taiwan teas vary greatly in flavor, ranging from soft to charming and refined to strong. The most representative of Taiwan teas is the mildly fragrant oolong tea, a clear and odorous tea made from semi-spherically shaped leaves. With its sweet scent and rich flavor, this tea embodies the essence of Taiwan’s mountains and rivers and is a condensation of fragrance and dew. It is a soothing tea unparalleled in this world. The beauty of Taiwan tea resides in the tea water from which it is made. Since ancient times, Taiwan has been known for its natural spring water. The aesthetic standard for good tea water is that it must be sweet, fragrant, clear, and chilled. Clear implies clarity in color and is for satisfying the sense of sight; chilled means it is refreshingly cool and pleasing to the sense of touch; and sweet and fragrant refer to the senses of taste and smell, respectively. Lastly, the swish of roaring mountain streams and the bubbling of boiling tea water fulfill the sense of sound. Taiwan tea sets are refined, elegant, and colored in mild and tender hues; come in a countless variety of shapes and forms; are beautifully artistic and meticulously crafted; have many functions and uses; and are convenient and easy to handle. The skill required to make tea sets has already advanced to such a degree that it is no longer considered a craft, but rather, has been elevated into an art form. The beauty of Taiwan tea resides in the tea-serving techniques. Tea-serving techniques possess charming poises and regal bearing; soft, graceful, and restrained gestures; traditional techniques; a dignified and solemn manner; and a warm and genial temperament. Depending on the situation or occasion, tea-serving techniques come in a variety of styles. The beauty of Taiwan tea resides in the island’s tea connoisseurs. The typical tea connoisseur in Taiwan is affable and respectful, unassuming and modest, courteous and reverent, gentle and warm, and amiable and easy to approach. Whether the magnate of a tea enterprise, a venerable tea art expert, a tea specialist, or a competent authority in tea-related affairs, Taiwanese tea connoisseurs never put on airs and are always willing to help others. The beauty of Taiwan tea resides in the setting of its teahouses. Private tea parlors in Taiwan have elaborate designs that cater to many different tastes. In general, most teahouses are meticulously decorated in a clear and distinct style. Outdoors teahouses emphasize the drinking of tea in a natural setting, combining mountains and rivers with tea drinking while lingering amongst nature. Park and garden teahouses, with their winding paths and corridors, are like stepping into a painting of a southern-style Chinese garden. Modern literati-style teahouses, serving as hidden retreats in large cities, deliver stillness and silence to those wishing to temporarily escape from the hustle and bustle of city life. British-style teahouses, which are warm, fragrant, clear, and attractive, capture the local flavor of the British countryside. Folk teahouses, passing on the cultural and historical relics of Taiwan, re-mold the memories of Taiwanese traditions. Modern teahouses, which are simple, clean, elegant, and refined, are in harmony with the pulse of the industrial economy. Educational teahouses consider tea education to be a long-term task and enthusiastically instruct tea drinkers without weariness. Agritourism teahouses transport people deep into the hilly tea fields to experience the true charm of Taiwan tea. Folk art teahouses, with their beautiful, fine-featured music and dance performances, emphasize the passing on of folk arts and culture. Salon teahouses, serving as gathering places for literary circles, host theoretical talks by elegant and refined cliques. In addition to these many types of teahouses, there are also temporary tea stations, which provide tea for the convenience of passers-by, and traditional tea tables, such as elders’ teashops. The diversity of teahouses in Taiwan has taken the culture of modern leisure and adorned it even further, making it more joyous, exuberant, colorful, and magnificent. The beauty of Taiwan tea resides in the tea refreshments that accompany it. A wide variety of delicious delicacies are designed to be served with tea, even for large parties. Many dishes even use tea as the primary ingredient in their recipes, thereby expanding the use of tealeaves, such as tea moon cakes, tea wines, tea noodles, and other tea products. Taiwan’s culture of eating snacks with tea, after undergoing much meticulous research, has allowed Taiwan’s tea refreshments to step into the aesthetic world of food and drink. The beauty of Taiwan tea resides in its tea feasts, whose spread and popularization can be attributed to its assimilation of many other different forms of art, such as literary art, the art of living, handicrafts, and the fine art of dining. Participants of such tea feasts, whether attending in the capacity of guest or host, can thoroughly enjoy tea drinking to its fullest, intoxicating themselves with tea and absorbing its implicit virtues. 吳德亮     2008/10/02      第654期 從荒蕪中逐漸綻放生機的老田寮茶園,卻意外地恢復了原有的自然生態,而名滿天下的東方美人茶賴以「著涎」的小綠葉蟬也因此滿天飛舞,使得所產的茶葉以醉人的蜜香與熟果香獲獎無數。 返台短暫休假的台商友人彭君,儘管遠赴鐵觀音原鄉安溪種茶已有多年,仍念念不忘家鄉老田寮僅存的茶園,邀我無論如何要前往看看。 茶園不大  茶葉屢獲大獎 老田寮?多麼熟悉又遙遠的一個名字,「家鄉的茶園開滿花,媽媽的心肝在天涯」,九○年代膾炙人口的【魯冰花】悠揚主題曲頓時在耳邊響起。儘管改編自客家文壇大老鍾肇政以龍潭為背景的同名小說,電影卻是在一九八九年的老田寮拍攝。生於台灣的魯冰花,總是剛開花就被土壤無情地掩蓋,但「身驅歿入土壤」,卻換來「很香很甘的茶」。座落苗栗縣頭屋鄉的老田寮,由於丘陵地多霧且排水良好,早在清朝光緒年間即已榮登台灣三大名茶之列,也曾是台灣第二大茶區,七○年代茶產量僅次於坪林文山而大於鹿谷凍頂。可惜在明德水庫興建完成後就逐漸荒廢,儘管鄉土味十足的老田寮村改名為明德村,老田寮茶也在當時蔣經國總統關愛的眼神下「賜名」為明德茶力挽狂瀾,仍不敵逐漸被遺忘的命運。今天談起苗栗茶,大家的焦點總是集中在鄰近的頭份、三灣一帶,令人不勝欷噓。 從中山高下頭份交流道轉台十三線,右轉跨越「明德橋」進入蜿蜒的鄉道,「風很輕,茶園邊的一排排相思樹葉微微搖晃著」,熟悉的電影場景逐漸清晰了起來。頭屋過去有個客家味十足的舊名「崁頭屋」,「崁」在客語為「小崖」的意思,崁頭屋就是位於小崖下的聚落,儘管滄海桑田,至今仍清晰可見溪畔的崁形地貌,看倌可千萬別用國語讀出諧音了。潺潺流過的老田寮溪依舊,只是名字早已換成了明德溪,周邊茶園也從早年的上千公頃降至今日的二十公頃,全鄉唯一的茶葉產銷班卻能屢獲大獎,令我頗感好奇。 修養生息  茶園生態恢復 步入門額高懸「隴西堂」的彭家單進式老厝,內部已改為小型茶廠,大廳牆上則掛滿了各項茶葉競賽的特等獎匾額。彭君笑說小時跟隨父母種茶製茶的兄弟,如今大多遠走他鄉另謀發展,反而四十歲出頭、早年未曾吃苦的么弟彭信鈞至今仍堅守家園,並勇奪二○○八年全台椪風茶製茶比賽特等獎,擊敗了原本最被看好的新竹、桃園兩縣,使得苗栗縣產製的東方美人頓時聲名大噪。地方政府雀躍之餘,還特別在台十三線道路旁樹立巨幅看板,讓外來遊客知道「特等茶就在頭屋」,藉此重現過去老田寮茶盛極一時的風光。 相較於台北縣三峽、新竹縣關西等其他茶區,茶園不是被大量種植的檳榔樹所取代,就是被新興的高爾夫球場或大型遊樂場蠶食鯨吞,頭屋的茶園卻多半是自然荒蕪而淹沒在雜草樹叢之間。彭垣榜解釋說,由於當地人口逐漸外流或老化,年輕人不願留守家鄉種茶,茶園才會荒廢大半。至於仍留守茶園崗位的叔伯輩們,也多半抱著「加減作」的無為心態,加上茶價競爭力不敵農藥化肥的飆揚,茶園完全粗放管理,頂多就是除除草,或依循慣例剪枝罷了。不過他也滿懷欣喜地表示,歷經十多年的生息修養,茶園意外地恢復了原有的自然生態:消失多年的白鼻心、領角鴞、藍鵲等稀有野生動物都回來了,仲夏夜晚也重現螢火蟲晶瑩閃爍的畫面。 小綠葉禪  造就東方美人 我走進剛剛修剪過的茶園,周遭不時可見白頭翁、五色鳥、喜鵲等鳥類的蹤影,更意外地在茶樹叢中發現完整的鳥巢,令人驚喜。 尤其讓我格外興奮的是,近年由於台灣氣候環境急遽變遷,加上各地茶農大量使用農藥的結果,讓名滿天下的東方美人茶,賴以「著涎」的小綠葉蟬數量銳減;好幾年夏天我帶領學生前往茶園拍攝小綠葉蟬,總要花上半天才能覓得一隻,以往漫天飛舞的景象不再。頭屋茶園卻是唯一可以發現電影場景中小綠葉蟬披著青綠舞衣跳躍的畫面。正如鍾肇政原著中所描繪的「那是青色的小蟲兒,小得還不夠教一隻小雛雞需要仰起脖子眨著眼兒才吞得下,而本領卻著實厲害,厲害得足夠叫一個壯健的農人頓足捶胸、束手無策」。 腦海中瞬間浮現【魯冰花】的電影情節:美術老師為了讓主角阿明參加繪畫比賽,不惜帶領全班小朋友到古家茶園幫忙抓茶蟲,卻換來鄉長(陳松勇飾)的譏笑「茶蟲不噴灑農藥,怎麼抓得完呢」? 沒錯,專門吸食茶樹嫩葉汁液的小綠葉蟬,曾是台灣茶農的心頭大恨,不過今天的身價可大大不同了。儘管慘遭蟲吻(客語稱著涎)後的茶葉會枯萎變黃,但節儉的客家鄉親卻不甘丟棄,以重萎凋、重攪拌以及高達六五%以上的重發酵手法,成就了今天台灣獨有的茶品「白毫烏龍」,以醉人的蜜香與熟果香,贏得今日市場上所向披靡的「東方美人」封號。 琥珀茶湯  椪風茶氣味佳 有別於新竹縣的「膨風茶」名稱,今天苗栗縣政府已將頭屋、頭份、三灣一帶所生產的福壽茶白毫烏龍茶東方美人茶等同型茶,統稱為「苗栗椪風茶」。至於明德茶、仙山茶、龍鳳茶、巖茶等同類型的半球形包種茶,則統稱為「苗栗烏龍茶」。 彭信鈞取出他獲獎的椪風茶與我分享,茶湯呈琥珀色帶紅,具有濃厚的熟果香味與蜂蜜氣味。熟果著涎的蜜香在舌尖輕轉舞動,飽滿的風韻在喉頭直入丹田,讓我頓時暑意全消。 傳承祖父與父親的製茶技術,至今已有二十多年經驗的彭信鈞表示,製茶過程中,最重要的關鍵在於日光萎凋,攪拌過程更要控制得宜。他說老田寮的春天以製作綠茶、包種茶為主;夏天則為東方美人與紅茶,品質較差的則製成「半頭青」;秋冬則為包種與少量的東方美人。順境而活、順著茶性而製茶,儘管收入不高,卻能苦中作樂、換得時間多陪家人,那種快樂不是竟日忙碌操勞的都市人可以想像的。 精緻農業  獲獎記錄不斷  頭屋唯一的茶葉產銷班班長余金星則表示,頭屋鄉種茶面積雖然大大不如以往,目前班員也僅有十五位,卻能不斷朝向精緻農業轉型,獲獎記錄不斷。茶園環抱的余家老茶廠,至今仍高聳著數十年歷史的大煙囪,廠內也保留了以磚頭砌成、以重油或瓦斯為燃料的的古老殺菁機,以及數台英國薩克遜式大型揉捻機,余爸爸驕傲地表示,那些都是台灣光復初期,締造台灣茶葉外銷奇蹟的英雄。 廠內還有一座我從未見過、外觀像是預拌混泥土機的「橄欖桶球機」,余金星解釋說,七○年代台灣茶業剛剛邁向「半機械化」,頭屋即以橄欖桶揉捻出來的桶球,或稱「球茶」而風靡全台,製成的茶葉外觀呈膨鬆的球型,比今天經「熱團揉」工序製成的半球形烏龍茶略為膨鬆,又比條形包種茶稍為緊結些。 目前老田寮茶區所種植的茶樹品種,以青心大冇最多,黃心柑仔次之。海拔僅有三百公尺的老田寮,以青心大冇製成的綠茶,竟然帶有高山茶才有的蛋白韻以及濃郁的綠豆香,讓一旁趕來收茶的資深茶商也嘖嘖稱奇。 新台灣新聞週刊 - 老田寮出好茶 東方美人醉香甜

2008.06.04 【中國時報 陳界良/苗栗報導】新聞來源:  全省椪風茶製茶比賽日前落幕,來自桃竹苗的地區製茶高手齊聚一堂,高手雲集的大縣桃園縣信誓旦旦要拿特等獎,結果出人意外是由來自苗栗縣小茶區頭屋鄉的茶農彭信鈞脫穎而出;另頭份、三灣的茶農也分獲頭等、三等獎,苗栗縣茶農風光十足。  風味絕佳的椪風茶主要產區在桃竹苗,桃園縣五月卅一日在龍潭鄉舉辦「全省椪風茶製茶比賽」,共有40多個製茶高手參賽,其中不乏60多歲的老師傅,有幾十年製茶經驗。比賽由主辦單位提供茶菁,參賽者現場進行萎凋、攪拌、揉捻與乾燥等,時間長達1天1夜。  苗栗縣僅派出6名茶農參賽,人數最少,結果卻出人意料,來自頭屋鄉的漢記茶廠彭信鈞勇奪特等獎。42歲的彭信鈞來自製茶世家,製作出來的椪風茶,被評審認為,不僅外觀、形狀極佳,滋味更是一流,茶湯呈琥珀色帶紅,具有濃厚的熟果香味與蜂蜜氣味。  頭屋鄉現今茶園面積僅剩20多公頃,算是個小茶區,沒想到由頭屋茶農彭信鈞奪下製作椪風茶的最高榮譽,讓賽前揚言要留下特等獎的桃園縣相當驚訝。頭屋鄉長徐月蘭、頭屋鄉農會總幹事湯陞春、常務監事胡立南與推廣股長謝金德等昨上午特地前往恭賀。  彭信鈞昨謙虛地表示,要製作出好品質的椪風茶,原料品質的重要性佔了60%,其次才是採茶時的氣候、製茶技術。製茶過程中,最重要的關鍵在於日光萎凋控制,及攪拌過程要控制得宜。他的祖父、父親都從事製茶,他從年輕時就開始學習,已有20年經驗。 湯陞春指出,彭信鈞的製茶技術在頭屋鄉早有盛名,曾獲頭屋鄉、苗栗縣製茶比賽冠軍。頭屋鄉種茶面積雖不如以往,但不斷朝向精緻農業轉型;除彭信鈞外,茶葉產銷班長余金星去年也入圍全國十大經典名茶的前25強,全省有300多人參賽,也相當不簡單。 中天電視網

農糧署 吳國義 壹、前言   行政院農業委員會為鼓勵茶農生產安全、優質、健康的茶產品,並宣導喝茶對身體的好處,於93年起舉辦「全國優質茶競賽」,廣獲茶農與消費者好評,對於茶藝推廣、茶農收益均有助益。今(96)年為配合新農業運動,結合人、物及地的行銷,改辦「十大經典名茶選拔」。本次選拔活動為彰顯優質茶品,除對參賽者產製之茶樣進行官能品評外,並增加「茶園管理」及「製茶廠管理」2項評分項目;另為加強行銷選拔產生的經典名茶,將與品牌結合,於包裝上將明列該茶品產製單位之品牌、負責人姓名及聯絡地址、電話等資料,以展示茶品產製來源。   台灣是世界有名的茶葉產區,目前種植面積約17,200公頃,產量約19,300公噸,每年產值約40億元,為促進國內各茶區特色茶之均衡發展,讓不同地域及高低海拔茶區之茶葉有同場競賽機會,以展現各地區名茶之特色,這次農委會特別舉辦十大經典名茶選拔,除了冀望帶動茶農更重視茶園管理及改善製茶技術外,也要讓國人了解台灣茶是優質、安全的,讓消費大眾可以安心飲用,使我們的優質生活,時常有好茶來相伴。另本會為推展國產茶外銷,將台灣烏龍茶列為我國農產品外銷四大「旗艦產品」之一,我們希望經由茶農、茶商及各界人士共同努力,把台灣烏龍茶外銷到世界各國,讓更多的外國人也能「享受」到台灣烏龍茶甘醇滋味。 貳、2007年十大經典名茶選拔作業內容摘要 一、與往年全國優質茶競賽相異之處   (一)成績揭曉與頒獎義賣活動同日辦理:考量媒體宣傳焦點及節省人力、經費等因素,將以往成績揭曉與頒獎義賣活動分別(相隔一星期)辦理改為同日舉辦。   (二)不排名冠、亞、季軍:為讓不同地域及高低海拔茶區之茶葉有同場競賽及表現機會,以展現各地區品牌名茶之特色,改以表彰十大經典名茶為活動主軸。   (三)與茶品品牌結合:選拔產生的經典名茶與品牌結合,於包裝上將明列該茶品產製單位之品牌、負責人姓名及聯絡地址、電話等資料,以展示茶品產製來源。   (四)將「茶園管理」及「製茶廠管理」列入選拔評分項目:為彰顯優質茶品,除參賽茶樣須通過「官能品評」選拔外,並於活動中增列「茶園管理」及「製茶廠管理」為選拔評分項目。   (五)將競賣活動改為獎座及獎金:因經過4次全國優質茶競賣活動,競賣之茶價飆高到1台斤256萬元,引起外界質疑刻意炒作及買賣不實之虞,為避免上述不當反映及展現活動參與社會公益之美意,由原競賣活動改為頒發十大經典名茶獎座及獎金。 二、選拔方式   第一階段:由各縣市政府以公開、公平方式依「茶園管理」及「製茶廠管理」等評分項目對參賽者進行評選。   第二階段:第一階段選出47位優勝者,將參賽茶樣送茶業改良場作「官能品評」評審。初審選出25件品質較優之茶樣重新編密碼進行複審,再依「官能品評」評分選取總分較高之前10名為「十大經典名茶」,各頒予經典獎座、獎金5萬元及獎狀乙紙(獎金及獎狀會後分發),餘15名入圍得主,頒予獎金2萬元及獎狀乙紙(獎金、獎狀會後分發)。 三、十大經典名茶辦理時程  Word 檔下載(19.50KB) 將另開新視窗/ pdf 檔下載(48.66KB) 將另開新視窗 四、評選項目及內容:茶園管理評分表、製茶場管理評分表  Word 檔下載(28.00KB) 將另開新視窗/ pdf 檔下載(78.76KB) 將另開新視窗 參、成績揭曉及頒獎典禮辦理情形 一、96年5月24日於茶業改良場辦理初審,由評審委員依評審項目並參酌各組參賽人數及品質狀況選出25名入圍茶農,重新編密碼並於96年5月31日進行複審,選出十大經典名茶之密碼於96年6月7日進行揭曉及頒獎。 二、頒獎典禮開始前,先進行國樂演奏,再由蘇主任委員致歡迎詞,歡迎行政院張院長蒞臨會場並品嚐十大經典名茶,再由評審團主審上台報告本次評審重點與過程摘要。接下來的重頭戲,係由張院長拆密封袋中密碼核對及公布得獎名單,名單揭曉採「採菁儀式」,經激烈競爭結果,由新竹縣峨眉鄉曾潤廷、宜蘭縣三星鄉謝朝陽、台北縣坪林鄉白青長、三峽鎮黃文雄、苗栗市利蘇明英、南投縣竹山鎮曾浚洌、名間鄉李錦士、鹿谷鄉許順景、嘉義縣梅山鄉王文肯及花蓮縣瑞穗鄉葉步銧等10位脫穎而出,院長並為獲得象徵最高榮譽的十大經典名茶之茶農逐一披掛彩帶、頒發獎座及獎金5萬元,每位獲獎者皆興奮的發表感言,其中花蓮縣瑞穗鄉葉步銧說為了學習紅茶製作過程,年輕時陪同父親遠赴中國大吉嶺取經鑽研製茶技術;另南投縣名間鄉李錦士亦提到落實作好茶園管理及製茶技術,低海拔茶區也能作出品質優良的好茶。接著10位得獎者並與院長及蘇主委齊同喝采「經典名茶,有夠讚!」及大合影。接下來,其餘15位入圍得主逐一上台,接受蘇主委頒發獎金2萬元並合影。頒獎典禮結束後,進行茶宴,現場由10位走動式的服務人員協助接待與會貴賓,享用25家參賽者於會場擺設茶席精心準備的好茶及主辦單位準備的精緻茶食,交流及觀賞事蹟看板,並在悠揚音樂中,歡喜賦歸,整個頒獎典禮熱鬧非凡。 肆、結語   茶為台灣重要經濟作物,農委會為鼓勵茶農及茶廠加強茶園管理,生產安全、優質、健康的茶產品,特舉辦十大經典名茶選拔活動,帶動茶產業發展。對於獲得十大經典名茶之茶廠所生產之茶品,除透過媒體巡迴採訪、報導外,同時亦將利用農糧署全球資訊網站刊登,提高其知名度,並行銷國際。本次選拔活動不僅激勵國產茶在國際市場之競爭力,更將促進茶農重視茶園栽培管理、製茶作業控管及分級包裝,生產出安全、優質、健康及環保的特色茶。因此,本會將再持續舉辦「十大經典名茶選拔」活動,喚起國人重視台灣茶產業並藉以提振茶農的士氣與活力。 2007年十大經典名茶選拔活動紀要(農委會)

記者黃其豪╱專題報導 石門鄉茶葉產銷班班長謝國村三代都是製茶名家,製茶技術繼承祖父謝泉、父親謝木得,15歲開始接觸種茶,承接製茶工廠38年,從事製茶產業超過半世紀。 謝國村曾獲87年台灣省10大傑出專業農友,專業領域便是茶葉,論起製茶稱得上家學淵源,祖父謝泉為石門草里茶廠師傅,與蒙日本天皇召見的製茶名家許李君同時期。謝泉在日治時期擔任甲長(等同鄰長 ),專精製茶教學,獲官方聘為巡迴教師,經常到南港、沙帽山、汐止等地教農友種茶,獲頒「製茶巡迴教師」證明。 謝泉以石門所產的茶葉製成粗茶,再扛到台北販賣所,進一步製作,留給兒子謝木得約卅公頃茶園,當時石門全鄉除少數林地、田地,舉目所及幾乎都是茶園,製茶工廠包括金記、德利、阿里荖等十餘家,其中有兩家為甲級製茶廠。 謝家在製茶高峰期,家中有5名以廠為家的長工,青少年時期便與茶葉為伍的謝國村回憶說,當時手工製茶年代,製茶業經營起來特別辛苦,因市場需求量龐大,製茶量比質更重要,工人分兩班制趕製,老闆又比工人辛苦,不僅自己要做,還必須緊盯著工人作業。 為了維持品質,機器開關一開,一個多月不曾停機,在採收茶菁後便開始與時間賽跑,由室外日光萎凋、室內萎凋、回軟、揉捻、初乾、布巾揉等,到採菁至殺青為止,至少15個步驟要接續完成;白天做不完就得連夜趕工,消耗的體力非一般工作所能比擬,由於做多、做久了,後來遇到不順手的地方,便會想辦法改良機器,甚至自行研發茶葉整形機。 茶農除了勞力,還必須費心思才能把茶葉賣得好價錢,因為早年交通不便、產銷制度不健全,石門茶農必須背著葉茶走到台北賣給大盤商,商人挑三揀四壓低價格,茶農礙於背回鄉內找不到買主,只得賤價在台北販售,這種不公平現象直到農會介入輔導才獲改善。

【大紀元6月13日訊】自由時報記者黃其豪╱專題報導 台灣台北縣石門鄉位於北海之濱,地處偏僻,居民早年以討海、務農為生,百餘年前引進「硬枝紅心」品種鐵觀音茶樹後,揭開石門製茶產業新頁,早期主要製成綠茶、紅茶外銷;民國70年後,改以鐵觀音茶做法製作「鐵觀音茶」,茶湯甘潤厚醇,一舉成名。 石門鄉農會總幹事許玉郎指出,鄉內茶園多數位在海岸台地的背側,由於不會受到海風直吹,加上大屯山優良的水質、山區雲霧繚繞,年均溫在攝氏18度至20.5度間,採茶時期溫差約5至7度,相當適合茶樹生長,好環境配合當地紅棕壤土質,使石門鐵觀音茶別具風味。 許玉郎說,石門製茶史追溯到百餘年前引進中國福建四大名種之一的「硬枝紅心」品種鐵觀音茶樹,該品種茶樹直立枝幹結實,芽少葉厚,製茶老師傅傳承中國安溪製茶技法,日治時代初期,國際茶葉市場需求殷切,當時以鐵觀音茶樹製作成綠茶及紅茶,搶攻國外市場,由於品質、口感均不亞於錫蘭紅茶,尤其受到日本人青睞。 耆老印象中,石門鄉老師傅許李(或稱許里 )製作紅茶技術超群、揚名國際,曾獲日本天皇召見的殊榮,並遠赴日本與當地一流製茶師傅交流,返國後進一步激勵鄉內茶農。 農會推廣股長李昌烈說,日治時代石門製茶業相當活絡,茶園佔地達一千多公頃,鄉內有多座大型製茶廠,最著名的有所謂「八大家」,如草里製茶廠、重門茶廠、金記茶廠等,阿里磅紅茶名聲響亮;台茶外銷為國家賺取不少外匯,但這種榮景因二次大戰有了重大變化。 許玉郎指出,戰爭期間台茶幾個主要消費國經濟開始走下坡,加上戰敗國日本消費市場萎縮,使外銷受挫,茶農轉而搶攻國內市場。 不過,因內銷市場供過於求,加上獲利遠不如外銷,供需失調下,造成鄉內茶廠一家家結束營業,生存下來的茶農改以小規模的家庭式經營,相對品管、製茶技術參差不齊,行銷通路也出現瓶頸。 由於「硬枝紅心」品種的茶樹較適合製作鐵觀音茶,而非早年的綠茶、紅茶,石門鄉農會也發現到這個問題,農會總幹事許玉郎70年到任後,開始與台灣省製茶改良場合作,輔導茶農以鐵觀音茶的做法製作「鐵觀音茶」,由於泡出來的茶湯甘潤醇厚,還散發出陣陣果酸香味,一炮而紅,石門鐵觀音也因此得名。 許玉郎說,目前鄉內茶樹面積約300公頃,春茶、冬茶年產量仍有30公噸,農會並於每年春、冬兩季舉辦優良茶比賽,得獎茶農除獲頒獎牌,所焙製的茶葉也變得炙手可熱,冠軍茶更是身價百倍。 石門鐵觀音 果酸茶香一泡紅

記者黃其豪╱專訪 石門農會總幹事許玉郎將石門當成第2故鄉,民國70年擔任總幹事以來,帶領茶農主攻鐵觀音茶,為石門鐵觀音打下口碑,讓石門鐵觀音、石門陳年老茶揚名海內外;農友擅長製茶、農會很會賣茶,是石門鐵觀音歷久彌新的關鍵。 許玉郎認為,在講究行銷的年代,不僅要會製茶,更要會賣茶,產品才不會被淘汰,所以不定期率產銷班成員出國參加農特產品展售,蒐集市場情資,也了解台灣茶葉國際競爭力在哪裡,還曾到中國安溪觀摩最道地的製茶方法。 鐵觀音傳統口味較重,但年輕族群喜歡帶有淡淡茶香的清香口味,於是他建議茶農烘焙口味較淡的鐵觀音茶,這種顛覆傳統的做法 在推行時受到不少阻力,最後由於市場反應不錯,茶農觀念也逐漸改變。 推易開罐 趨近市場 另一方面,為因應都會繁忙生活,消費習慣趨向便利性,農會也自意大利進口全自動茶袋包裝機,每台機器一天可生產4、5萬包茶袋,並研發易開罐茶品飲料,方便消費者選購。 陳年老茶 攻伴手禮 除了開拓年輕一代的市場,農會並集多年製茶經驗,推出鐵觀音陳年老茶,陳年老茶強調傳統香醇的風味、重視喉韻,而且要儲存10年才能上市販售。第1批石門陳年老茶收購自民國71年的上等鐵觀音比賽茶,經妥善儲存,每年視天候狀況進行4、5次焙火程序,待第10年期滿加以精製,才以瓷醰包裝上市,屬於特級茶製品,首批老茶84年推出後即廣受品茗行家歡迎,加上包裝精美,成為送禮自用兩相宜的伴手禮。 許玉郎說,石門鐵觀音茶採布巾揉的製作程序,是與眾不同之處。農會花5年時間研發改良焙茶爐,結合電爐、電焙爐及傳統挖地窖木炭焙茶精華,成功利用木炭熱能折射穿刺功能,讓茶葉緊結條索並達到卷結的外形,老師傅利用保溫箱熱茶葉,讓茶菁在溫熱中充分達到催化作用,再以布巾反覆至少18次包裹搓揉、掀開動作,使茶香濃郁持久,滋味醇厚爽口,常飲不傷胃。

There is so much interest in weight loss and oolong tea, a.k.a. wulong tea, that we are going to look at research supporting the connection. Let's start at the beginning All tea comes from one plant Camellia Sinensis if it doesn't come from that plant it is not tea (herbs come from a variety of plants). Over time, the plant has protected itself from photosynthetic stressors by forming chemical compounds known as polyphenols. Polyphenols, which include flavonoids, have the same beneficial class of compounds, antioxidants, that make fruits and vegetables good for you. The difference in green tea and oolong tea is processing. All tea is green when picked. Green tea is heated in order to halt the natural enzymatic reaction (oxidation) of the leaf. Once dried, green tea leaves are then rolled intentionally breaking the cell structure. Oolong tea leaves are plucked, kept under carefully controlled conditions and allowed to oxidize. These leaves are not intentionally broken, leaving most of the cell structure intact. These processing differences make each category of tea beneficially different even though they come from the same plant. The Weight Loss Connection The two main ways to reduce food related body weight are; increase energy expenditure (EE) and inhibit the absorption of nutrients, including fat and carbohydrates. Caffeine is a stimulant so it is widely accepted that the caffeine in tea increases metabolism, hence increasing EE. So the question becomes, is it only the caffeine or are other compounds in the tea contributing to that increase? The Research The Chinese have long believed that oolong tea is beneficial in reducing and maintaining weight. A Chinese study, in 1998, of 102 females showed that continuous consumption of oolong tea for six weeks resulted in a reduction of body weight. This study, along with the question of other compounds contributing to tea's weight loss benefits, spurred further research. In 2001, Physiologist Dr. William Rumpler, of the US Agriculture Research Services' Diet and Human Laboratory, investigated the ancient Chinese belief that oolong tea is effective in controlling body weight. The study measured how tea influences energy expenditure (EE) and included 12 male volunteers who were given 4 separate beverage formulas over three consecutive days. The beverage formulas consisted of; 1) full strength oolong tea, 2) caffeinated water with caffeine equal to full strength oolong tea, 3) half strength oolong tea and 4) non caffeinated water. The participants 24 hour EE was measured and resulted in;
  • EE levels of about 3% higher when they drank either the full strength oolong tea or the caffeinated water versus the non caffeinated water.
  • Participants burned an average of 67 more calories per day when drinking the full strength oolong tea.
  • Participants increased fat oxidation (fat burning) by a whooping 12% after consuming the full strength oolong tea versus the caffeinated water.
  • This data confirms that a component other than caffeine is responsible for promoting the preferential use of fat as an energy source.
  • The increase in fat oxidation in this study is amazing! Drinking oolong tea can actually tell your body to burn fat for energy! Scientists then speculated that caffeine combined with EGCGs worked together to increase fat oxidation. A Japanese study, conducted in 2003, went one step further comparing the benefits of oolong tea and green tea on weight reduction. Eleven healthy young female students participated in this well controlled study. Participants received three different beverage formulas;
  • oolong tea,
  • powdered green tea leaves and
  • water.
  • Both teas were prepared with boiling water. The oolong tea steeped for five minutes and the powdered green tea leaves were dissolved.
    After measurements were taken, the results determined;
  • Oolong tea had higher EE levels from beginning to end and at intervals of 30, 60, 90 and 120 minutes.
  • EE levels peaked at 90 minutes for both oolong and green tea and remained at their respective levels until 120 minutes.
  • These results indicate that after consuming oolong tea you will expend more energy then if you were to drink green tea or water and that it can last up to two hours.
  • The concentrations of caffeine, individual catechins and other polyphenols were also measured producing these interesting findings;
  • The caffeine and EGCG content was much higher in the green tea versus the oolong tea.
  • The concentration of polymerized polyphenols was significantly higher in the oolong tea versus the green tea.
  • These findings show that it's the polymerized polyphenols, highest in oolong tea, that link tea to burning fat, not just the caffeine or just the combination of caffeine and EGCGs. Furthermore, the rest of the compounds compared in the teas were similar or equal to one another with no marked differences, reinforcing the results. We have shown that oolong tea significantly increases EE for up to as much as 120 minutes and can even promote preferential use of fat as an energy source making it a healthy tool for reducing and maintaining weight. So what about absorption of nutrients? Oolong tea's effect on blocking the absorption of fats and carbohydrates is thought to play a key role in its weight reducing benefits. While more studies need to be done, initial studies indicate that oolong tea has absorption blocking potential. There are proven methods for losing weight and keeping it off; exercise, getting enough sleep and eating a balanced diet. Oolong tea can enhance these positive changes and garner faster results.   • Oolong tea is not a quick fix despite the recent advertising claims by slick marketing "professionals."
  • Oolong tea does not have to be expensive to be effective.
  • $39.95 is too much to pay for a 30 day supply of low quality oolong, get what you pay for.
  • These studies do not indicate that oolongs grown in a specific area are better fat burners than other oolongs. It's the processing that counts.
  • Losing 20 lbs in 30 days by adding two cups of oolong tea to your daily routine is nothing more than hype. If this were true, I'd be a size 2.
  • If you were dieting, drinking oolong and exercising it would be hard to achieve that much weight loss in 30 days.
  • If it sounds too good to be true, then it is to good to be true!

    行政院農業委員會茶葉改良場研發茶葉新製品
    ~ 佳葉龍茶(GABATEA)~
    蔡永生 陳國任 林木連 一、什麼是佳葉龍茶?
    佳葉龍茶是一種含豐富r胺基丁酸(r──aminobutyricacid)的純天然茶葉新製品;r──胺基丁酸英文簡稱GABA,所以佳葉龍茶又稱GABA茶或GABARON茶(日本人稱),或譯為佳寶茶,中國大陸稱為金白龍茶。佳葉龍茶在日本早已是商品化大量產製之新型態茶,其發現最早是由前日本國立茶葉試驗場津志田博士所發現;1987年津志田博士於研究茶樹胺基酸代謝時無意中發現,當茶菁原料精長時間厭氧處理後,胺酸(G1utamicacid)會大量轉化為r──胺基丁酸而天門冬鞍酸(Asparticacid)會轉化為丙胺酸(Alanine)。由於含豐富特殊胺基酸r一胺基丁酸所以特命名為GABA茶。 二、佳葉龍茶加工簡易具發展潛力?
    佳葉龍茶之加工遠比傳統包種茶及烏龍茶之製造更為簡易且省工,只要茶菁原料經適當之厭氧處理即可製成佳葉龍茶,新研發出來的產製技術以多次反復厭氧有氧發酵可大幅提升佳葉龍茶 沖之r──胺基丁酸含量鑒於佳葉龍茶是一加工簡易又良好的新型態茶,行政院農業委員會茶葉改良場為促進臺茶之多元化發展與利用,期以提升臺茶經濟價值,近幾年積極利用省產茶菁為原料,試製佳葉龍茶,目前已試驗證實其產製之可行性,為增進臺茶之多元化發展與利用,擬提供相關產製技術予業界參考。

    冬山鄉茶農參加「九十七年度『宜蘭茶』春季優良茶品級鑑定競賽」,表現傑出。 日期:2008-05-07     發佈人:本所農業課 本鄉茶農參加「九十七年度『宜蘭茶』春季優良茶品級鑑定競賽」,表現傑出。 本鄉茶農日前參加由宜蘭縣茶葉發展協會主辦之「九十七年度『宜蘭茶』春季優良茶品級鑑定競賽」,歷經激烈競爭,仍突破重圍,大放異彩,表現相當優異。本鄉茶品向來以品質精良聞名,此次參賽果然不負眾望,林帛江君及林煌國君分別於「烏龍茶組」及「新品種茶組」競賽拔得頭籌,獲得「特等獎」殊榮;陳秀蔥君亦於「新品種茶組」競賽脫穎而出,獲得「頭等壹獎」之肯定。此次競賽,本鄉獲獎無數,張鄉長及鄉民代表會謝主席,特於五月五日舉行之頒獎典禮出席授獎親予肯定,除恭喜得獎茶農外,亦感謝每位茶農製茶之用心。本鄉得獎名單如下: ◎ 新品種茶組
