台灣阿薩姆紅茶的故鄉-日月老茶廠 [巧食舖]和日月老茶廠的緣，應該是由客人June牽成的吧！因為第一次知道茶廠的故事，是聽曾經把[巧食舖]拍得美美的並放上自己的部落格的June說的，後來又聽另一位熟客說起，我們就決定約時間前去拜訪。而到茶廠時，才知道茶廠的莊小姐也在June的部落格上看到[巧食舖]的照片和故事，所以在我們連絡時，馬上主動邀請我們前往呢！ 一早7點鐘從台南出發，一路上欣賞著不同的景色，越接近南投就越覺得空氣清新起來。唯一遺憾的是，一路上整個山頭看上去依然是那一望無際的檳榔樹，幾乎是呈60度仰角無限延伸，深深的侵入整座山，一座又一座的檳榔山，不禁讓人覺得痛心及惋惜。在埔里從台14號公路轉入台21號公路，拐進山徑隨即看到一間遺留著歲月痕跡的白色廠房，與世無爭的佇立在茶園裡，這就是日月老茶廠了！   說起老茶廠的歷史要追溯至日據時代，也是台灣阿薩姆紅茶的最早起源，那時，這裡生產的紅茶可是專門供給日本皇室的。台灣的阿薩姆紅茶可以說是日據時代日本人到印度【引進】回來的，其中還有一小段滿有趣的故事：當初的日本人派了幾位老先生藉著到印度茶園考查的名義，在商談時引開當地的茶農，偷天換日的將阿薩姆紅茶的種子神不知鬼不覺的偷偷裝在隨身帶的柺杖裡帶回台灣來 (因當時的印度人不願意將紅茶種子給其他人)，並與台灣北部同屬大葉種的茶樹一起培植，但嚐試種稙了好幾個地方後皆失敗了，最後終於在日月潭這裡種植成功，因為日月潭的空氣乾淨、又有豐沛的水氣足以讓茶葉吸收。 台灣光復後茶廠由農林公司接管，近年農林公司因著前任董事長夫人的理念--希望不必為了一口茶而濫殺生命，而將耕地重新整治並培養有機土質，慢慢轉型成為有機茶園。為了培質出可以種植的有機土質，必須重新培養土地(休耕、人工除草、種植堆肥綠色作物…)，並忍痛連根拔起舊的老茶樹，經過三年的試種才能開始生產有機茶，這其中的損失及停擺，皆是為了這片我們從小到大生活的土地和存活於其中的萬生萬物。茶廠希望能有帶頭的作用，去影響附近的舊茶農能夠砍除檳榔樹，重新地種植起他們從小最熟悉的茶來。而以傳統自然農法種植的茶樹，樹根會緊緊抓住泥土，對土地是有幫助的；以慣行農法噴灑農藥種植的方式，會將附近的草連同殺死，無法與土地結合，而使得土質鬆散。 這裡種植的紅茶主要是以台茶8號--大葉種阿薩姆紅茶，以及台茶18號--紅玉紅茶為主。採手摘一心二葉(高級索條型)的茶菁，經萎凋、捻揉、解塊、發酵、乾燥的過程，用的都是日據時代遺留下來的機器製作(沒想到我們喝的茶與日本天皇的茶是同一個機器製作的呢！)。因為是無農藥及有機栽種，與大自然的生物共享大地的賜予，收成量也幾乎會耗損一半，但老茶廠仍舊秉持用能幫助土地的方法種茶，儘管在初期受到一些冷諷熱嘲，現在也開始有一些農民願意砍掉檳榔樹加入他們了。 曾經，日月紅茶也參加了世界級的紅茶品質競賽，並和享譽許久的世界名茶---祈門紅茶、阿薩姆紅茶、錫蘭紅茶競奪前三名的寶座。現在，最出名的紅玉紅茶（台茶18號）可說是老茶廠的心血結晶，除了有著印度阿薩姆種的風味之外，還有一股令人印象深刻的濃郁奶香和果香。日月茶有清新雋永的味道、馥郁的香氣、美好的茶色，最重要的是喝得到無農藥的安心。要享用一杯天然安心的好茶，背後是多少歲月及多少心血的努力才換來的，我們坐"飲"其成的同時，希望能在尾端盡一點小小的心力支持他們，用行動影響更多人的消費習慣，因為，消費可以改變世界。 到老茶廠參觀可看到他們對環境的用心：一切的資源皆以可回收為主，連寄送的信封及紙箱也都用一再回收使用；園內整潔清爽，洗手間甚至比家裡的還要乾淨，進入時換上他們準備的鞋子，減少鞋底泥沙進入，清洗時得以減少用水。這些小地方的用心，是必須徹底從想法改變，才做得到的！現在也有開放一般民眾自由入廠參觀，不過導覽和食宿，還是以團體為主(約30人)。週休二日，若想出去走走，日月老茶廠也不失為一個好選擇，但記得幫忙保持環境清潔喔！若不能親身到當地遊玩，喝杯老茶廠的好茶，感受些茶多酚及茶香，讓自己的身心靈能作一個放鬆，其實也滿好的喔！       附記：老茶廠提供的有機蔬果餐，看起來是不是很吸引人啊！套一句一向不喜素食餐點的另一半說的話：這是近幾年吃過最好吃的素菜了！   品嘗日月 精選自然無添加美味 - 台灣阿薩姆紅茶的故鄉-日月老茶廠

更新日期: 2007/07/07 11:04 記者:范綱武 【大台灣旅遊網TTNews記者范綱武】 地處南投心臟地帶的魚池鄉，由於氣候與地形的因素，非常適合種植紅茶，加上在農政單位及產銷班積極輔導、運作之下，所生產的阿薩姆紅茶不但產量豐富、品質優良，也逐漸打響了魚池紅茶的名聲。 魚池的阿薩姆紅茶已有相當的歷史，魚池鄉紅茶栽種以大葉種紅茶為主，此品種是日據時代由一位名叫新井耕吉郎先生奉命前來規劃紅茶事業時，從印度阿薩姆省引進台灣，讓紅茶在魚池落地生根，因此也讓耕吉郎先生得到「紅茶之父」的尊稱。 日據時代相關單位就台灣許多地點的地理環境、土壤、氣候及當地茶葉製造品質等因素一一研究，最後選定海拔600～800公尺、全年濕度穩定、地形多變的魚池鄉作為栽種地點，由於天然環境非常適合紅茶生長，再加上茶改場魚池分場不斷進行品種更新把不好的品種淘汰，因此造就出聞名遐邇的阿薩姆紅茶，「台灣紅茶故鄉在魚池」一點也不為過。 目前魚池所栽種的紅茶有阿薩姆、台茶七號、台茶八號、台茶十八號及野生茶樹，其中以台茶八號和台茶十八號（紅玉）為主要種植品種，多年來在茶業改良場魚池分場的努力下，台茶十八號品質更佳，色、香、味都屬上乘，堪稱世界頂級紅茶。 阿薩姆紅茶為大特色在於濃郁甘醇，茶湯水色深紅濃厚，且十分耐沖泡；紅茶除了直接飲用外，加入牛奶調製成阿薩姆奶茶後，「色」、「香」、「味」俱佳，可說是奶茶中的上品。至於改良過的台茶十八號更是具有奇特之香氣，茶湯會散發天然之肉桂香外，尚有淡淡之薄荷香，此種迷人之香氣即源自於台灣野生山茶，曾被紅茶專家譽為台灣特有之「台灣香」，在眾多世界知名紅茶中屬於極為特殊且獨特之品種，好紅茶，就在紅茶原鄉魚池。 台灣茶新聞網：http://twtea.travel-web.com.tw/

Although based in Paris since 1919, the story of tea merchants, Betjeman & Barton began in Dublin when Mr. Betjeman trained in the Dublin School of Tea in 1910-1911 based at the time in Trinity College. (The fighting Irish are the world's greatest tea drinkers!). Mr. Barton, his model employee, soon became a business partner. The science of tea helps create bonds of confidence and friendship and naturally, Didier Jumeau-Lafond, who fell into a cup of tea as a child, was requested by Mrs. Betjeman to take over Betjeman and Barton in 1978. The Betjeman and Barton teas are highly elaborated following centuries of old traditions. These teas are sold loose in 125g, 50g tins or in muslin tea bags. The tea bags are made of pure muslin and have large enough mesh to allow optimum infusion. These bags are hand sown, one by one and each big enough to contain 2 grams of tea. This operation is executed with great delicacy so as not to damage or crush those great garden teas. And during infusion they allow the leaves to swell and release their aroma. How to make a good cup of tea according to Didier Jumeau-Lafond. First, you must simmer the water and not boil it. The water must be as 'soft' as possible. Some tea drinkers even use mineral water. All tea pots are good to use even though the great connoisseurs prefer porcelain or terra cotta to silver. However try to choose a tea pot with a long spout to expose the tea to the air during pouring. Never use a detergent to clean your tea pot. Rinse it and then leave it to dry. This way a brown deposit will form itself on the bottom of the pot. Tea is in many ways like coffee you'll appreciate it more if you use old tea pots. Always warm your tea pot with simmering water before using it. Two grams of tea per person are enough to make an excellent tea. Make it a habit of measuring a spoonful for each person and an extra one for the pot. Three to five minutes are usually sufficient according to your taste and the tea you choose. A bitter taste is acquired when you use boiling water and if you leave your tea to brew too long. Terroirs Fine Food & Fine Wine

Our Teas: About Our Infusers

 

While tea does have varietals, similar to wine, all tea comes from the same species of plant Camellia sinensis. The difference between the major tea types (black, oolong, green and white) is in the way the teas are processed after harvesting.

Black teas are fully oxidized, meaning that they are exposed to air for two to four weeks before they are heated and dried to stop oxidation. Oolongs are partially oxidized. Oxidation gives a tea more body and brings out stronger flavors, consequentially, while many of our teas are good with honey, black teas are by far your best choice if you prefer milk and sugar. Black tea should be steeped with boiling water for 3-5 minutes. Oolongs should be steeped a bit less than boiling, also for 3-5 minutes.

Our Teas: Black & Oolong Teas

 

Herbal teas are technically called tisanes not teas, as they are not made from the tea plant Camellia sinensis. Still, in accordance with typical modern use, we use tea and tisane somewhat interchangeably with our herbals. Our herbals are made from all natural rough cut flowers and herbs, including many (such as chamomile, hibiscus and ginger) that have been used for taste and health for centuries.

Rooibos (as found in our African Solstice) is a South African plant that is often referred to as “red tea,” though it is also a caffeine-free tisane. Leaves from rooibos, or Aspalathus linearis, are oxidized much like tea. The high antioxidant levels in rooibos approach those of tea, and rooibos tisanes are rapidly gaining popularity in Europe and North America. All of our herbals should steep with boiling water for 3-5 minutes or longer to taste.

Our Teas: Herbal & Red Tisanes

 

While tea does have varietals, similar to wine, all tea comes from the same species of plant Camellia sinensis. The difference between the major tea types (black, oolong, green and white) is in the way the teas are processed after harvesting.

Green tea undergoes very minimal oxidation, meaning that it is exposed to air for one to two days after harvest. White tea is immediately heat shocked to prevent oxidation, and then dried. The difference is really more of a spectrum than a clear distinction, both kinds of tea taste fresher and lighter than blacks or oolongs. They often have grassy overtones and a clean finish. Greens and whites should be steeped at less than boiling water for 2-4 minutes. We recommend 190°F, but, as with any tea, you can experiment to your own taste.

Green tea leaves hand rolled and styled to protect their precious cargo of aromatic oils. A short steeping will release the sweet aromas and full-bodied flavor of this sought after and healthful tea. High in antioxidants. Contains caffeine. K

Our Teas: Green & White Teas

想要享用好喝的紅茶，首要在選擇茶葉，不同分類的紅茶飲用時也會有不同的口感。紅茶的分類大致可依「原產地及種類」、「製茶公司品牌」、「等級」及「產品形狀」( 例如散茶、茶袋、罐裝茶等 )來區別，各人可依偏好及時機選擇適宜的種類。   　紅茶與咖啡相同有產地品牌及調和品牌，然就算為產地品牌，也會因茶園栽培管理 、採摘時間及天氣不同而有不同香味，為確保品牌的品質穩定，故會由專業 技師將產地的茶葉混合調製。   ◆ 茶葉的名稱圖 　 所謂的一心二葉採摘法，即是摘取Flowery Orange Pekoe、Orange Pekoe及Pekoe 三部位，也屬於等級較佳的新嫩芽，至於Pekoe Souchong 及 Souchong 部位就不算上等茶葉了。 ◆ 紅茶的等級 　 一般購買國外品牌紅茶時，即會看到OP或BOP等標示，此乃紅茶的等級。紅茶的等級主要用來表示使用的茶葉部位、大小而區分的，對沖泡時間有所參考幫助，此等級並非決定味道的好壞。

片茶類 ( Fanning )		指從12～14目碎茶中風選出質地較輕的片形茶
粉茶類 ( Dust )		外形呈砂粒狀，緊細重實，湯色較深，滋味濃強，亦是袋泡茶的好原料。
